Ingredients:
- 6 slices of thin bacon, cut into 1-inch pieces
- 1 medium onion, diced
- 3 carrots, scrubbed clean and diced
- 3 stalks of celery, diced
- 4 large potatoes, peeled and diced
- 4 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream
- 1/2 cup shredded cheddar cheese
- Chopped fresh chives for garnish
Instructions:
- In a large pot, cook the bacon pieces until crispy. Remove the bacon and set it aside, leaving the bacon grease in the pot.
- Add the diced onion, carrots, and celery to the pot with the bacon grease. Sauté until the vegetables are tender.
- Add the diced potatoes, chicken broth, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer until the potatoes are soft.
